Makes approximately 7-8 Servings.

Ingredients:
6 Cups of Fresh Zucchini, Diced
6 Cups of Vegetable Stock
2 Celery Stalks, Finely Chopped
1 Pound of Fresh Spinach or your favorite Green Vegeta,
1 Bay Leaf
1/2 Onion (White or Yellow), Finely Chopped
3/4 Cups of Split Green Peas (Drained and Rinsed)
1/4 Cup Fresh Parsley, Chopped Finely
2 Tablespoons of Virgin Olive Oil
2 Tablespoon of Earthrise® Spirulina
1/4 teaspoon of Fresh Basil
1 Dash of Salt to Taste
Instructions:
Combine the oil, the onion and the celery in a large pot.
Saute until the two vegetables are very soft
Add 4 cups of the vegetable stock into the pot, along with the peas and the bay leaf
Bring the mixture to a boil and then simmer on a low heat for 45 minutes
Add the zucchini, the remaining vegetable stock and the seasonings into the mixture
Continue cooking the mixture for another 10 minutes
Remove the bay leaf and discard it
Pour the mixture into the blender and puree until smooth
Pour the mixture back into the pot and then add the spinach (or other green vegetable) as well as the parsley
Cook the mixture over a medium heat for five minutes
Remove the pot from the stove
Quickly whisk the Spirulina into the mixture
Healthy Options: Serve with herbed croutons or sprinkle some parmesan cheese on top of each bowl of soup.
