    Spira-Zucchini Soup

    Ingredients:

    • 6 Cups of Fresh Zucchini, Diced
    • 6 Cups of Vegetable Stock
    • 2 Celery Stalks, Finely Chopped
    • 1 Pound of Fresh Spinach or your favorite Green Vegeta,
    • 1 Bay Leaf
    • 1/2 Onion (White or Yellow), Finely Chopped
    • 3/4 Cups of Split Green Peas (Drained and Rinsed)
    • 1/4 Cup Fresh Parsley, Chopped Finely
    • 2 Tablespoons of Virgin Olive Oil
    • 2 Tablespoon of Earthrise® Spirulina
    • 1/4 teaspoon of Fresh Basil
    • 1 Dash of Salt to Taste

    Instructions:

    • Combine the oil, the onion and the celery in a large pot.
    • Saute until the two vegetables are very soft
    • Add 4 cups of the vegetable stock into the pot, along with the peas and the bay leaf
    • Bring the mixture to a boil and then simmer on a low heat for 45 minutes
    • Add the zucchini, the remaining vegetable stock and the seasonings into the mixture
    • Continue cooking the mixture for another 10 minutes
    • Remove the bay leaf and discard it
    • Pour the mixture into the blender and puree until smooth
    • Pour the mixture back into the pot and then add the spinach (or other green vegetable) as well as the parsley
    • Cook the mixture over a medium heat for five minutes
    • Remove the pot from the stove
    • Quickly whisk the Spirulina into the mixture
    • Healthy Options: Serve with herbed croutons or sprinkle some parmesan cheese on top of each bowl of soup.
